I didn’t used to like strawberries as a kid. I found them to be bitter tasting. I think it was because I was eating them during the wrong season. My dad would buy strawberries all year round, no matter if they tasted sweet or not, but growing up in Los Angeles means access to everything year-round or at least that’s what many Angelenos think, but full access year-round doesn’t mean SWEET strawberries or fruit year-round. Strawberries still grow seasonally, as do many fruits.

During the summer months in California, we would buy our strawberries from the people who sold them along the street. They were usually the best deal and the tastiest. They would be fresh, picked either that morning or the day before. We would buy Oxnard strawberries. There are strawberry fields all around and you can see them as you drive along the freeways out near the farms in Camarillo and Oxnard.

The Unexpected Twist

A really unique pairing with strawberries is black pepper. My aunt taught me this one so credit for this flavor combo goes to her. She added black pepper to the strawberries we were about to put on top of our vanilla ice cream (back when i could it eat), but anyways she did this to boost the flavor of the strawberries. They were incredible. I didn’t realize before how much they added to such a little berry.

Nothing beats that first bite of an extra sweet and juicy strawberry and the buttery pastry around the vibrant strawberries, as well as a sprinkling of just enough black pepper to awaken the senses—it feels like reconnecting with an old friend, familiar yet refreshed.

ingredients

for the crust:

  • 1 1/4 cups all-purpose flour

  • 1 Tbsp sugar

  • 1/2 tsp salt

  • 4 oz coconut oil, refrigerated until solid then cubed

  • 1/4 cup cold water

for the filling:

  • 3 cups strawberries, halved

  • 3 Tbsp honey

  • 1 1/2 tsp vanilla extract

  • 1 1/2 Tbsp arrowroot powder

  • 1 tsp freshly ground black pepper

  • 1 egg (for egg wash)


for the crust:

  1. Combine the flour, sugar, and salt in a large bowl.

  2. Cut in coconut oil with fingers until blended and mixture resembles wet sand.

  3. Add cold water and mix with a fork until dough comes together. Turn out onto a clean work surface and kneed dough and press into a disc, about 1 inch thick. Wrap in plastic wrap and chill for at least 30 minutes.

for the filling:

  1. While dough is chilling, combine strawberries, honey, vanilla, arrowroot powder, and black pepper in a large bowl. Set aside to macerate.

to assemble:

  1. Preheat oven to 375 F.

  2. Unwrap dough and place on a sheet of parchment paper. Roll out to 1/4 inch thickness. Place on a sheet pan.

  3. Spoon the strawberries, minus the juices, into the center of the dough and fold the edges over them halfway up the mound.

  4. Brush the dough with egg wash or and bake for 35-40 minutes. Let cool and top with your favorite ice cream.
